A cheese toastie is a classic sandwich that is as easy to make as apple pie, and something that you’d normally associate with American cuisine. But a Bandra eatery has an Italian take on cheese stuffed between slices of bread. Their herbed burrata sandwich features two Italian staples — ciabatta bread and burrata cheese, which is similar in texture to mozzarella. It’s a dish that might well make you exclaim ‘Mama mia!’ when you dig into it.

What do you call the union of a waffle and sandwich? Simple. ‘Waffwich’. That’s what a chain of desert parlours across the city have named their range of dishes, which co-founder Alisha Shirodkar describes as “created fresh at our waffle stations with specially formulated eggless batter and premium fillings.” She adds, “They are freshly baked, hot and crispy, and come in a variety of batters and fillings.” It’s a sweet take on what the 4th Earl of Sandwich invented, quite literally.

The conventional idea of a sandwich is that you fill two slices of bread with savoury ingredients to make a filling dish. But sometimes, the definition of a sandwich can extend to ice creams, as an artisanal dessert brand has done with the caramel hazelnut disc and the cookie sandwich. Suvir Saran, chef master, shares, “Our sandwiches are as bespoke and artisanal as our ice cream, which is a true labour of love and culinary alchemy. The cookies are baked a la minute, and introduce the nuance of texture, temperature, freshness and quality to the experience of eating ice cream layered between cookies.”
